I've had some of my pigs for like 7 months now and they STILL run when I try to catch them, do guinea pigs always do this or will they some day realize I am not going to eat them when I try to catch them?

I find that by the time a pig is fully grown, you can tell if they're comfortable with being handled or if they're always going to be a bit nervy. I've owned pigs who have grown up to be total teddy bears, and some who were always a little skittish.
Regular handling, chatting to them and reassurance is the key :)

Yes, guinea pigs will stop running away from you. Normally it will have happened when they are fully grown. Some guinea pigs learn to trust you quicker then others so it is nothing to worry about. Maybe when you try to hold them, bring some food with you and when they are eating talk to them.

I'm not sure if this trick will work for you, but our two boys will happily wander into their carrier if we put it down into their cage. When we first got them, we'd use the carrier to transport them to free-range/laptime as we did it in the bedroom (they're in the living room)- so they associate the carrier with going on a fun trip.

So instead of chasing them around in circles, they go into their carrier (it only normally takes a couple of minutes)- and then we pick them up inside the carrier (where they're a lot calmer, and don't tend to run.) No one's stressed out this way, and they're expecting hands to come and pick them up.

It's made lap time a lot easier for us, and free-range, as we tend to take them out for a few hours- then they totter into their carrier and fall asleep when they're ready to go back
