Hay vs. Pellets

With my eight little mouths to feed I have noticed some interesting patterns in who prefers what to eat. Of course they all have their preferences in veggies and leafy greens, but I've found a big difference in who eats hay and who eats more pellets. In particular I have one who barely eats pellets but loves his hay (JK) and another (Newt) who barely touches his hay but eats through his pellets super fast.

I haven't restricted pellets for Newt, or hay for JK, but I am not sure if I should be?
 
Pellets should always be restricted—while they do provide a good source of micronutrients, they’re also pretty fattening and high in calcium.

Hay, on the other hand, should never be restricted.
