It is a show term ;) Think it refers to a long hair type piggie that has had a haircut ;)
 
A Peruvian (for example) in coat has not been chewed by others or trimmed by Humans :)
 
I hear it all the time it is when a guinea pig has a long coat and has either been cut or chewed by cage mates and isnt in its best standard for showing O0
 
When a pig is 'in coat' it means that it has not been chewed, nibbled or trimmed, its left in its natural state and if its a show pig will probably be wrapped up.
If the pig is no longer in coat, it means that someone could have chewed the coat or it has been trimmed.
Its very difficult to keep a pig in coat, I tried once a few years back and the sheltie boar decided that he didnt like his wrapper in and nibbled it out.
