Hi,

I'm thinking of making some fudge :(|)
Does anyone have any good recipes?

Thanks :)

My recipe :) (well it's from the Dairy Book of Home Cooking lol)

1/2 pint fresh milk
450g / 1lb granulated sugar
100g / 4oz butter
1/2 teaspoon vanilla essence

1. Pour milk into a saucepan & slowly bring to boil
2. Add sugar & butter
3. Heat slowly until all sugar is dissolved & butter melts
4. Bring to boil, cover pan and boil for 2 mins
5. Uncover & continue to boil steadily stirring occaisionally for 10 - 15 mins or until a little of the mixure dropped into a cup of cold water forms a soft ball when rolled between finger & thumb.
6. Remove from heat, stir in vanilla. Leave to cool for 5 minutes.
7. Beat fudge until just begins to lose its gloss and is thick & creamy.
8. Transfer to a greased 18cm/7 " square tin.
9. Mark into squares when cool. Cut up with a sharp knife when firm and set.
10. Store in an airtight container.

You can add cherries or walnuts with vanilla if you like.

For chocolate add 100g/4oz grated plain chocolate before adding sugar & butter.
