COVID-19 Quarantine Cooking

I baked some bread at the start of the week. And some biscuits a while ago. I don’t have anything to munch on in the house so I’m feeling a little...bereft! Maybe I should make some apple muffins....if I can be bothered. I’m feeling lazy 🙄C40DDDC5-AD13-480C-9122-A1AACE7CFF72.webp

Yes it was nice. But it would be better if left to rise as it was quite stodgy. If you don’t like sweet(ish) bread then use less sugar.
Show and tell and share

I cooked pancit bihon today. It's a Filipino dish same as chow mein. It's basically a rice noodle stir fry. I used chicken strips with all the veggies. But you can replace chicken with prawns, or pork, or other meat you want. This will be my food for the week! 🤗😋

Navajo flatbread sounds lovely.
Would love the recipe please
It was super super simple, you can make it with just flour and water if you want! I can't seem to find the link to the actual recipe, we were sent it by a friend, but I remember what we did.

We made ours with:
2 cups flour
1 tbsp baking powder
1 tsp kosher salt
1.25 cups water

This is the basic recipe we used. We also threw in a spices as desired. We out in garlic powder, onion salt, and Italian seasoning. But you could also throw in lemon pepper or anything else that sounds yummy!

Mix all your dry ingredients together, stirring as you go. Add your water slowly, and be careful about how much you put in. Too much, and the dough becomes too sticky when you knead. We want it elastic, but able to form a distinct ball. We kneaded ours until it was similar to a sticky tacky pizza dough, and then formed balls and used a rolling pin and generous amounts of flour to roll it about as flat as a tortilla. Then we threw it on the griddle on top of some olive oil, and it took probably 1-2 minutes per side and they were done.

Enjoy! Obviously, send pictures here if you make anything. Would love to see!

Thank you. Will post pics when I make some.

Made some Navajo flatbreads this evening, flavoured with fennel seeds.
A really lovely recipe - thanks @Mikknu
That's so cool that you made it! What did you flavour it with?

We made creamy cashew chicken curry with white rice and garlic naan bread. Stellar reviews across the board, gladly! Except from me, I dont like chicken ironically enough xD It turned out really well for a first try.

I used fennel seeds. I had planned on using cumin seeds but didn’t have any.
They were really good.

Another Tuesday, another home made meal. This week was my week, and I chose a spicy chicken citrus marinade for grilled pork loins/chops. It was 2 oranges, 3 lemons, and 3 limes plus a whole host of spices like cayenne, cumin, oregano, chipotle, turmeric, etc. We served some of it shredded and in tacos, and some of it whole on top of Spanish rice with a lime wedge.

Then, I made peaches and cream which turned out amazing! I was told by my S.O., who h a t e s peaches, that if he'd had peaches and cream growing up he would've grown up to love peaches. He's had 3 servings so far! I feel so proud. 😄😄🥰

We made a peach sugar syrup out of the remainders from sugaring the peaches, to put on ice cream later on too.

We used 3.5 pounds(5 cups!) of chopped peaches, and after we'd all had a serving we only had about 3 servings left! 5 cups of peaches equated out to about 2 small servings per cup.

The citrus marinade sounds rather nice - I must do that.

Have you tried orange & olives as a sauce?

Yes thanks for the recipe @Mikknu I will be trying these myself to go with chilli or curry, there are no naan breads to be found in any of our local supermarkets! I think I will try garlic and coriander...
