Vegetables That Last

I'm going on holiday for a week and I'm asking a neighbour to keep an eye on my Guinea pigs whilst I'm not around
I've decided to make up a little box full of all the food etc they will need so she doesn't have to go chopping and measuring etc
The pellets will be easy, and I've got old toilet roll tubes that I stuff with hay so I can make sure I have 1 of those for each day, but I'm stuck on vegetables

I'm trying to think of vegetables that will last a week without going rotten so she doesn't have to go to the shops and buy any or chop anything up but I also need to make sure they have the variety
 
I usually buy lettuce, peppers, broccoli and cucumbers weekly but I'm not chopping them up until the day we need them so not sure how well they last once chopped.
 
I buy lettuce, peppers, cucumber, carrots and green beans and baby tomatoes and all last a week easily. Mint does too.
But that's washed and stored in a sealed container in the fridge, not chppped up.
For a weekend only I'd pre-chop veg. But for a full week I'd rather leave it whole.
Maybe cut up the first two days' worth so she can see portion sizes, then write a clear day by day list of what you'd like her to give for the rest of the week.
Alternatively, put largish chunks in each daily bag and ask her to cut those smaller on the day, so you can decide what and how much per day, but she chops the stuff to more reasonable sizes.
 
Sorry if this is a silly question but would they need to be cut really small?
Could they not have them chunky?
 
My piggies eat their vegetables chunky. I figure it's good for them, and that saves time for more important things... Like cuddles!
 
They probably could have them chunky. I don't cut mine really small, but I do tend to cut strips or slices rather than giving for instance and entire 1/4 bell pepper as one piece, or an entire inch of cucumber as one piece. My piggies are only 2 months old though so bigger piggies would probably be fine with bigger chunks.
 
My piggies generally eat cucumber, pepper and green beans alongside herbs and a few slithers of spring greens. (I follow the IC diet)

I chop their cucumber and pepper up in advance leaving in a tupperware box in the fridge. It does however only last for a few days before it starts to go mushy so now I will chop up just a few days supply of cucumber and pepper in advance and then chop up the remaining supply half way through the week when that's ran out.

The green beans I feed them one each daily. I don't chop these up in advance but break each one in to 3 pieces at teatime. The green beans last at least 5 days without being chopped up.

May be you could chop up your veg to last a few days and then ask your neighbour to chop the other half up half way through the week?
