I'm considering putting together some fleece toys and decorations for the pigs, are there any fabrics I shouldn't use (like ones that end up easily pulled to bits and swallowed)?
Any unsafe fabrics?

I would say it really depends if your piggies are chewers or not.
My cage has various fleece and cotton items in it, and none of my piggies have ever chewed them.
So I would start with one or two things and carefully monitor for any signs of chewing or damage.
If chewed, any type of fabric could be dangerous so you would need to remove it immediately.
