I feed my piggies red, orange/yellow, and green peppers daily. I feed them a few slices of the peppers. Occasionally I give them cucumbers and carrots. Is that good or should I change up their diet?

They should have a bit more variety.
There are lots of guides on diet on this site which will give you an idea of what can be fed daily and what can be given but should be limited due to high calcium content.
Daily my pigs eat a piece of cucumber, some pepper (red, yellow or green), some lettuce (little gem, romaine) (never give iceberg lettuce) coriander. I then add in a rotation of other things such as baby corn, spring greens, green beans, spinach, kale , rocket, occasionally some parsley, carrot, celery, dill,

My Finn and Lara get variety of veggies like lettuce, cilantro, parsley, basil, cucumber, carrot, celery, kale, grass, dandelion, apple, blueberry, and etc. Out of those, lettuce, cilantro, basil, parsley, grass, cucumber, dandelions, celery, can be given everyday. Others including carrots, kale, and various fruits should be given with care, and in rotation so not everyday.

My Finn and Lara get endless supply of hay with some pellets. They get three meals of veggies a day.
