Have you tried herbs like cilantro, parsley, basil, dandelions and etc?
My boy Finn will finish his herbs before he eats romaine lettuce and baby spring veggies.
Mine also likes apple but I only give small amount a couple of times a week.
My girl Lara eats everything, she grew up eating only hay and pallets and when she came to live with me, she started eating everything.

perseverance. Keep trying with them. You might have to try the same veggie several times before they eat it. Try leaving it in their cage for a day to give them time to keep going back to it.

I was wondering the same thing, this is asked because 1) a young/baby piggy may not have even seen a vegetable yet and 2) when they are put with an older piggy this teaches them what to eat as they copy the older piggy almost, and encourages them to come out and explore if they’ve got a buddy. Then it turns to ‘I want what you have’ and ‘I can eat faster than you’

Totally true- when I adopted my 2 new fatties on friday night they didnt understand what hay was for. My guinea pigs absolutely adore watermelon (just a really small piece each, with the seeds removed). I don't feed them this everyday, once a week at most for a treat but I know a lot of piggies who go absolutely nuts for it - so maybe worth a try!

I'm not exactly sure how old he is. We adopted him as "Mature". I do only have one piggie because I am not allowed to have another.

Why are you not allowed another one? Lone piggies can become depressed and it’s not natural for them to be on their own. Not a good situation- I’m presuming you with with parents at home? Please try and convince them it’s much better for him to have a friend. They are prey animals and need a buddy so they don’t feel scared or lonely.

You should have a read of the guide on companionship on here, and show it to your parents. Your lone piggy will take a long time to learn what veggies to eat especially when he is on his own. They really do need to be in pairs, you’ll see such a difference in their personalities.
