I tend to give my pigs a lot of veg, but with a recent new little, increasing our numbers to ten, i kind of need to cut some costs, and although Veg will continue, i was hoping to try and cut it down a bit. In spring they'll be back out on the grass. At present they have a good handful of curly kale (between both groups), and loads of spring greens and corn, few bits fruit couple times a week. How much is a good amount for one pig, and can veg be missed out at all say for example, we go away for a day/night and leave normal food, will they be ok without greens.

For cheaper veg try looking in places like Lydl, & Aldi. I picked up some brocoli for 15p in tesco! So always check the veg clearance in shops too :p Tesco do bag of carrots for £1, and they easily last us a week (with a dog eating them too) They also do market value peppers for £2 bag :)
Also, go to places like green grocers, and ask if they have any fruit/veg that's a bit old, that they could give away/sell at a lower price.

I give mine 4 veggies a day, 2 in the morning and 2 in the evening. This evening between my 7 they had 4 carrots & a big sprout leaf each, then a slice of pepper and some rocket this morning.
Personally, I think fresh fruit & veg is really important part of their diet. They need it to give them the extra vitimans and goodness that the dry food dosnt.
If I don't feed my boys veg one evening (when I go out to dinner and don't get back till 9 or 10) They'll let me know!

Remember, there's more veggies out there then just greens ;)
