is this enough veggies for my single piggy? she’s nearly one year old and she gets veggies in the morning and before i go to bed! :)

Is that iceberg? If so, please don't feed it. Iceberg is full of water, provides no nutrients and shouldn't be fed as it can cause stomach upsets and soft poo. Every other lettuce is fine to feed. Yes that looks like enough for a single piggy. Be aware that carrot should only be fed at most once a week (an even then in a small amount). Tomato should only be fed once a week as well.
Foods that can be fed daily include romaine lettuce, coriander, cucumber, celery and capsicum/pepper.
Are you planning on getting her a friend in the future?

yes i think i might be getting her a friend soon! although the person i got her from said that she was quite aggressive towards all the other piggy’s she tried pairing her with.

That's great that you're thinking of getting her a friend! It sometimes takes a piggy a while before they find their perfect match. My girl Daisy is very dominant, so it took 3 failed bondings before she found her perfect match in a neutered male Oscar. Most rescues offer "dating" which means your piggy can pick their own friend before you take them home. Any bond comes down to character compatibility and just because one bonding doesn't work out doesn't mean your piggy is aggressive 😊
 
I would personally offer much more herbs so the whole thing is more leafy and less lettuce, but only because the herbs offer vitamin c more than lettuce does and lettuce, being mostly water, has lower nutrition.
Daily mine get a quite a lot of coriander, and often one other herb (mint or basil usually), one small leaf of lettuce, cucumber, bell pepper and often a green bean.
Definifely don’t give carrot or tomato very often - carrot is too high in sugar and tomato is too acidic to feature regularly in the diet.

what could i give her daily instead of the bell peppers. ive tried giving her bell papers soooo many times, and she hasn’t tried eating them, she completely avoids the pieces in her bowl, so she doesnt really think she likes them :)
 
I can’t add to the food advice but did want to say about finding a friend.
I rescued Micah from PAH Adoption centre because I saw that he’d been labelled as having to live alone because he’d been bullied.
I brought home a pathetic scrap of piggy with raggedy ears and dodgy eyes.
He was neutered and bonded with my sows.
He blossomed into a happy, healthy and very lively boar.
Finding the right companion is what matters.
Hope you can find the right piggy friend for your girl.
