I don't drink tea at all if I can help it - don't like it at all.

Sounds as if we could have a game for you of Guess the Ingredient!
We put our name for something, an item of food or a particular dish, and you have to guess what it is and put the American version.

How I'm feeling? Not so on the bright side, I woke up feeling worse than when I went to bed which sucks. We'll probably be taking me back to the doctor for a check up tomorrow, although I'm pretty sure there's not much they can do for me beyond extend the course of my antibiotics.

Oh boy oh boy... a game sounds fun.

A swede... uh... yeah, I have no idea. I'm thinking... a dessert? Something to do with crackers? And a rocket... mmm... a type of candy? Something with caramel and wafer?

😅 Oh no they're plants! That's so cool, those names are way cooler. I was thinking of candy bars xD

Okay, here goes... you'll probably know most of mine! They're both foods.

Runzas - I can't even guess!

Horseshoe - a biscuit, think you call biscuits cookies!
They're both a type of sandwich! Here in Nebraska, Runzas are so popular they have their own fast food chain. It's only in Nebraska though. Horseshoes come from Illinois! I've got a lot of family out there, we visit every couple months or so. If you look up runzas and horseshoes, it'll tell you exactly what's in them, but a runza is meat,cabbage, onions, etc. in a dough pocket, and a horseshoe is toast(only on the bottom), ham/beef, fries, and cheese.

Here's two more new ones- Mud Buds and Monkey Bread.

@Wiebke I love a good casserole! Do you have favourites? Any sort of vegetable casserole I'm down for.

Mushroom casserole is my favourite; it goes best with roesti.
Veg I rather like in a soup, either in a chunky mixed veg soup or in a homemade blitzed veg soup. My hub makes a great broccoli soup!

Corn casserole for me, although green bean casserole is a close second! We don't make much soup in our family, but a mixed veg and rice stir fry? MMMMM. Same with any type of roasted/grilled veggies in quinoa. Sometimes, if we have extra, we throw it in broth and make it a "soup".

Eggplant? Aubergine is eggplant? What a wonderful name! That's so much better than eggplant! And beetroot is for red beets, or all beets... ? Can I feed my boys both of these then?

Aubergine is indeed eggplant and courgette is zucchini. The UK goes with the French name in both cases.

You can get all sorts of flavours, and they do something called Temperature Tuesdays. The temperature at 6 AM is the temperature of Runzas for the day. It can be a bit hectic at times.

I don't think we'll have restaurants open here for long though. They closed restaurants in Ohio and Illinois along with a few other states, so I imagine it's coming here too. Right now actually, our phone lines are actually overloaded. We can't make calls around my city right now because too many people are making calls. Everyone in my family has tried, and we all get "the lines are busy" error, even though we all have different networks and were calling from different places.

Here is the mushroom casserole recipe; with a couple of eggs mixed in can also be used as a vegetarian quiche filling.
It is a vegetarian and not a vegan dish recipe. To make the casserole vegan, you can replace the cream with corn starch/water and use vegan grated parmesan cheese.


Mushroom casserole and quiche

Casserole:


1 bag of dried porcini (optional) or replace with a mushroom stock cube or two. Leave out the salt if you use stock cubes and water.
Break into roughly evenly sized pieces and soak in boiling hot water (which should just cover the porcini pieces) for at least 20 minutes – 1 hour

1 tbsp butter or vegetable oil, heat in a pan

3 shallots, finely chopped
1 garlic clove, crushed
1 tsp dried thyme or Italian herbs
gently saute in medium until the shallots are translucent.

750 sliced mushrooms of your choice, add and cook for a few minutes.
Add the soaked and drained porcini (reserve the draining liquid and add partially or wholly.

250 ml cream of your choice, pour in.

2 tbsp corn flour
2 tbsp brandy or white wine, mix and then add. Simmer for a couple of minutes

½ tsp salt
pepper from the peppermill, to taste
¼ tsp cayenne pepper or mild chilli powder, season

For serving as a casserole:
3 tbsp of grated parmesan
1 bunch of chives, snipped, stir in and serve.



Mushroom quiche:

Let the casserole cool and preheat the oven to 220 C.

2 eggs, lightly beaten until they are an even colour
1 bunch of chives, snipped, stir into the casserole mix.

Line a 28-30 cm diameter quiche dish with grease-proof paper at the bottom. Then drape the ready rolled pastry over it (if necessary roll it thinner roughly to size).

3-4 tbsp of grated parmesan, sprinkle over the bottom. Then spread the mushroom filling evenly across.

Put the quiche in the oven straight away and bake for 25 minutes or until it is done in the middle or lower half of the oven.

We aren't quite at shutting down levels, but with panic buying, things are a little out of hand. There was no milk, soup, cheese, or toilet paper at the local store according to my Mom. She took pictures of it.

We've been told the phone lines should be back up in about an hour. I'm looking forward to it.

Here is the Swiss Roesti recipe. It is the German speaking Swiss national dish and my favourite. It started out as a farmer's breakfast but is one of these wonderful comfort foods... You can eat anything with it you like, from fried eggs or sausages with onion sauce to whatever casseroles you love!


Tradional Swiss potato roesti

Swiss roesti is originally a farmers’ breakfast, but roesti with a diced meat casserole has become the Swiss German national dish. For best results, use old potatoes that have lost some of their water content, so it is usually best during the cold months of the year.

Evening or early morning before:
Per person: ca. 300-500g firm cooking potatoes
(I prefer red skinned desiree potatoes; they are available in Sainsbury’s.

Cover with water, bring to the boil and cook until just done. I usually test with sticking a knife in. Peel straight away using an oven glove to hold the hot potatoes. Let the potatoes cool down a little, cover the bowl with a lid or with clingfilm and let firm up in the fridge.

Cooking:
Grate the potatoes. Depending on how salty you like a roesti, you can sprinkle a little salt ove the grated mix from time to time; more if you use unsalted butter.

Melt a generous amount of butter in a non-stick frying pan that is about on ¾ heat. As soon as the butter has dissolved, you add the potatoes. Turn them over a lot to make sure that all bits have taken on some butter and have turned a slightly more golden colour. Once the potatoes start sticking together more and are falling down, you pat them down into a round cake with a thickness of ideally at least 1-2 inches. Cover with a wide lid that is not quite reaching to the rim of the cake so the condensation is not dripping into the pan directly.
Reduce the heat once the rim of the roesti is showing a golden/brown colour and let the potatoes warm through.
Depending on the amount, it takes between 15-45 minutes.

Place a large plate that is ideally a bit larger than the frying pan over it, hold it firmly in place, and flip over so that the golden crust that forms at the bottom of the pan is now on top.

You can refry leftovers on the following day, but not the crust; it goes soggy.

Serve with:
- fried bacon and/or fried eggs
- sausages and onion gravy
- gammon steak
- a meat (beef, turkey, chicken, liver or kidney) and/or mushroom casserole; any vegetable casseroles.
- Vintners’ roesti: get a pack of cheese fondue mix or grate some gruyere (60%), Swiss (emmental) cheese (30%) and parmesan (10%) over the cooked roesti. Place under the grill until the cheese has melted. Season with pepper from the peppermill.
- Bernese roesti: fry off lardons or bacon bits in the frying pan first, take out and mix with the grated potatoes. Add butter to the bacon fat and follow the basic recipe.

Oh gosh! Uh... I don't have it on me, it's currently in Omaha xD Let me see though, my family initially looked up a recipe online and then experimented with it until we got what we wanted...

You'll Need:

- 1 Box Jiffy Corn Muffin Mix (Try this if it isn't in the UK: Jiffy Corn Muffin Mix Copycat Recipe - Food.com)
- 2 eggs
- 1/2 cup of melted butter (118 mL)
- 15 Oz. of corn (1 can of it(My family usually boils corn on the cob and then shaves it because you can get 3 cobs for a dollar or less in the peak of the season. Depending on how big the cobs are, 2-3 is usually enough.)
- 15 oz. creamed corn (1 can of corn, again we usually make this ourselves but it's just as easy to buy. Cream corn is really just corn in a mashed up corn soup, with a little bit of milk and flour. Throw in some salt and pepper for seasoning)
- 1 cup of sour cream (240 mL)

Instructions:
1. Preheat oven to 350 degrees F (175 degrees C), and lightly grease a 9x9 inch baking dish.

2. In a medium bowl, combine butter, eggs, corn bread mix, whole and creamed corn and sour cream. Spoon mixture into prepared dish.

3. Bake for 45 minutes in the preheated oven, or until the top is golden brown.

And bam! It should be a firm, crisp casserole on the top and side, with a lovely creamy inside. If you want it a bit drier, add more corn muffin mix! A bit creamier, add just a tad bit more sour cream(not a lot!). I messaged my sister, if she sends me a picture of the original recipe I'll upload it here. I usually double up the recipe, because I can eat a 9x9" within a couple of hours. It's the absolute best.

ALSO my great grandma makes an AMAZING tuna casserole, I'll ask my mom if we have the recipe written down anywhere so that I can copy it over.

I'm sad to report that we are going to take me back to the doctor today to get a re-up of sinus antibiotics(no more tests I'd prefer, but it's probably not gonna happen.), and we'll probably get me some sort of snack while I'm out. I'm hoping for pizza.

Today my brothers and S.O. are going to be officially moving me. I'm looking forward to getting my stuff back, and to be going outside, if only for a little bit.

I'm sad to report that we are going to take me back to the doctor today to get a re-up of sinus antibiotics(no more tests I'd prefer, but it's probably not gonna happen.), and we'll probably get me some sort of snack while I'm out. I'm hoping for pizza.

Today my brothers and S.O. are going to be officially moving me. I'm looking forward to getting my stuff back, and to be going outside, if only for a little bit.

Fingers crossed that it all works out for you. But glad that you can go outside again, if only for a little!

I've lived for a decade with chronic sinusitis when I was younger and suffer with narrowed and oversensitive sinuses since. They are not yet so bad that I qualify for an operation. I feel for you!
 
My friend had an operation to clear her blocked sinuses and it was thoroughly unpleasant when she came round from the operation she was in a lot of pain.
 
Things went pretty well. I did get pizza! A margherite, super good. Since my throat appears to be healing up nicely, we didn't do any more tests. I did get another course of antibiotics though. I definitely don't want(and can't afford) an operation!

My stuff is being moved over, trip my trip. Slowly. It'll take a few trips probably. Everybody wants to see the guinea pigs! They, of course, will not show themselves. I'll be posting an update later, I finally got my cuddle cups! AND AND Kenai ate a dandelion loop from my hand! I got so excited, I tried to get him to eat a piece of bell pepper but he still refused it :c

Progress though! Koda is just as much of a scaredy cat as ever, he really doesnt like people. He seems to be rumbling at Kenai a lot, I think he's top pig? But I have no clue tbh, I was told Kenai was top pig and was operating off of that. Maybe moving switched it up.

Checking in here, I know it's getting late in the UK. Apologies.

It was my nephew's birthday today, so I got cupcakes which was nice. I didn't get to see thwm(my nephew and his little brother) for too long though unfortunately. Still, cupcakes. I was told that they were asking about me a lot, and they wrote me a "letter". It was just my name and their names, he just turned 5 today and is working on beginning writing.

My tiny pig garden had it's first cat grass sprouts! It's been germinating since before the lock down, and was transferred to my terrarium just a little bit ago. There's some cilantro, basil, green beans, and just a few gourmet lettuce seeds in the terrarium. We're seeing what will grow.

I'm in fairly good spirits today, but mostly because of being able to see some people. Starting tomorrow I'm back to limited contact, especially now that I've gotten all of my things. I'm not looking forward to it. I get lonely quickly.

I started looking for other jobs. I'm really beginning to worry. People are being laid off all over the place, 3 of my friends so far have been laid off and zi have a feeling it's coming for me too. This is the worst time to be job hunting though... blargh. It just drives me up the wall with worry.

It's 16:00 where I'm at, so I may update again later if something happens. For now though, a nap.
