sometimes it happens because there is other favourite food available... maybe there are yummy pellets there into the bowl
I adopted a piggie (two years old) last November and he also was not used to eat bell peppers and other vegs; but when he was hungry and found only the bell pepper he ate it. Anyway, pets can be stubborn and guinea pigs usually eat only what they learnt to eat in the first days of life, but they don't need to eat so many different vegs. Mine eat only some vegs, not all of them. Today I gave them a leaf of kale and they sniffed it wondering what it was (and they did not eat it; just the same drama if you offer some fruit).
Give it a try eating a piece of red bell pepper in front of your piggie chewing and munching; maybe this trick will work.
Bell pepper is important because it is rich of vit C. Usually the red pepper is appreciated.
If your piggie is stubborn and fresh grass is available where you live, give them the grass; it is always appreciated and can replace all the vegs (fresh grass is far better and more natural than the vegs).
