COVID-19 Quarantine Cooking

I discovered last week that the kids love bangers and mash. Even the youngest who didn’t really eat meat between the ages of 1-~5! She didn’t used to like sausages at all but will not eat three of them!

Anyway, today I did chicken in a different way to normal. Pierced the pieces and let them sit in the marinade - soy sauce, cumin, coriander, bay leaves, chicken stock cube, mild chilli (didn’t taste it at all!), smokes paprika and something else I can’t remember. I then turned it on and added some onions and garlic I had fried a little earlier. Then just let it cook in the marinade and juices. I also added some Worcester sauce and brown sugar later on. I made gravy using the leftover juices I cooked the chicken in. It turned out a little too salty but otherwise it was yum. I’ll have to think what to do with it for lunch today.

Oh wow! This looks like a Filipino adobo. Basically our main marinade is just soy sauce, vinegar and garlic. But some varieties can include all the seasonings you mentioned. Yuuuummmmm! 🤤🤤🤤😋😋😋

That sounds 🤤 my husband made pork with a marinade of soy sauce, garlic and spring onions that you cook the pork in. It’s nice too.

My husband has just made a satay sauce for us for this evening- I will add in some mixed seafood and that’s us sorted.
I might try your marinades later in the week.
Sounds yum! I’d highly recommend the soy sauce, ginger and spring onion. No salt though 😁

I need to cook dinner but can’t be bothered 😬
 
Dinner tonight is italian oxtail rag. I‘m super organised because I started cooking around 10:30. You’re supposed to cook it for 5 hours. And it means I can relax later. I’m trying to decide if I have the energy to make some chapatis.....

Tonight we are having a "whatever is in the freezer that needs eating" dinner again. Tonight is grilled pork chops. Last night it was Chinese style Pork chops and tomorrow will probably be pork sausages unless its the rest of the chicken thighs.

Thank you, it wasn't bad, I think it could have done with a few extra minutes but for the first this year it was alright and everyone ate it!
 
We had amazing curries tonight. Spices and recipes from The Spicery . Did a mackerel curry, tarka dhal, and a mashed butternut squash, served with salad, raita, rice and naam. Lovely.
@Siikibam is it difficult to make your own chapattis?

Was just having a quick look at the website, it looks really interesting.
 
Tonight we’re having rice with groundnut sauce. It’s a bit of a hassle to cook as you have to be around to stir regularly. Else it will bubble up and overflow. How do you make groundnut sauce?
I have a lovely recipe for groundnut stew in one of my books
 
You first have to ground raw red peanuts. Boil some water and mix the ground nuts with some cold water. Add in the boiled water and leave to bubble but stir regularly - it has a habit of overflowing when it gets the skin on top. You’ll know it’s ready when you can see small oil bubbles on the surface. You then add the salt to taste and leave to cook for a short while longer. It does thicken depending on how much water to nuts is in there. You can also add in chopped onions and cook them at the same time, or fish at the end.

Feeling lazy today so I made some walnut & parsley pesto to have with spaghetti this evening- very fast food.
 
I made fried rice with pork chops. The girls loved the pork 😁

I'm doing chicken which we’ll have with rice and chapati. The chicken has garlic paste, garam masala, smoked paprika, garlic and mild chilli. Hope it’s not too spicy as I was a little heavy handed with the chilli.
