My ivermectin arrives tomorrow. In the meantime, do you think I could use the Johnsons anti-mite spray on my piggie to start killing the mites?

No, I would wait until your Ivermectin arrives.
Usually you have to keep 2 weeks between treatments, if you use your Johnsons spray tonight, it will not be safe to use the drops tomorrow aswell.
The drops start working immediately and you will see improvement very quickly (If the piggies have lost hair from scratching).
