If I've got River (9 month sow skinny pig) out for lap time, and I'm stroking her chin/lower lip, sometimes she'll take my finger firmly in her teeth and sort of hold on as if she wants me to start or stop something. She hasn't broken the skin, but it's definitely a "knock it off" message, and I'm wondering if anyone else has had a pig with this particular behavior?

Some piggies don't like what you do. What I do with my piggies at lap time I very gentlest stroke above & below there eyes. Mine are in seventh heaven. Lol

That's the only way I manage to calm Betsy down when she is in season which are always fun (not!) Her personality completely changes and she goes from the most lovely placid piggy you will ever meet to a harridan!

River just started doing this recently, and she LOVES her chin, chest, lips, neck, cheeks, ears, and lower back petted. I feel like she's trying to dominate me with this new move.

Don't you have to be careful stroking skinner's. That's something I read somewhere. Lol.
You have to look at the positive side she doesn't bite you. I'm sure it's in one of the forums.
