I think that a lot of pigs do this.

Maybe he doesnt want to be picked up at that particular time? Maybe he is about to go to the toilet or eat some hay?

hi this is usually normal behaviour as it's a natural instinct for them to run away they are prey animals after all and also the sensation they get when they are picked up some guineas don't like it i'd say if he's fine once he's out and he isn't biting or anything then it's just normal behaviour
all my pigs run away from me but they love there cuddles as well piggies eh
