I was told when I got mine they must have good quality hay all the time, so I give it to them, as well as their veg. But there are more experienced folk here who will know more.
Pellets are the least important part of their diet- make up around 5%, are they eating lots of hay and grass? as this makes up around 80% of their diet
Fruit shouldnt be given daily and its important to give them varied veggies
hay, hay and more hay...of the best that money can buy ! Also, go out in the garden and cut handfuls of long grass. There are also a variety of naturally growing weeks which guineas love !
