Vitamin C for a bad veggie eater

Djingis came to us in april from a home where he was cared for, but maybe not well cared. From what the previous owner told me about his diet they used to give him hay, cucumber and parsley.

Here he gets a pretty wide range of different kind of veggies. Cucumber, romaine and bell peppers is daily. He really likes bell pepper, kale and tomatoes but the rest he tends to just take little bite from.
He gets a smaller amount of Science Selective pellets, which he enjoys. He gets Oxbow Timothy/orchid-mix hay, and he's a really good hay-eater. I would guess hay is about 95% of his diet.

We noticed he had a hard time eating and visit the dentist yesterday. He has slightly overgrown molars and alot of erosions on his teeth from lack of vit c and d.
These coming days we will give him fluid vit c and some extra pellets mushed in his critical care.

But, what about later? I could really appreciate some advice on how to make a 2 year old used to veggies. He has a neighbour who licks the bowl to not a miss a little piece, but thats just slightly helped Djingis to eat a bit more veggies when they lived together.

We really want to do all we can do to avoid him getting tongue trapped under teeth and more erosions, and ofc to have a healthy diet to prevent other kinds of health problems too.
